Virgin Pimm's and Apple
2 oz apple cider 1/2 lime 1 oz tonic water 1/2 oz blackcurrant syrup

Place the blackcurrant syrup and half a lime in a glass. Crush with a muddler or pestle to extract the lime juice. Add ice cubes, apple cider and tonic. Add 2 thin slices of lime to the drink and top with lime zest. Courtesy Chloé Duquette, Méson restaurant, Montreal.
