20 ml Lime juice
60 ml Pineapple juice
15 ml Ginger syrup
2 drops Angostura bitters
4 Mint leaves
Sparkling water - to taste

Place all ingredients in a cocktail shaker. Shake vigorously. Pour into a glass containing a few ice cubes. Top up with sparkling water.
