3/4 oz Lime juice 3/4 oz Grapefruit juice 5 leaves Sage 1 oz Simple syrup 1 Egg white 3/4 oz Haskap berries juice

In a saucepan over low heat, make a simple syrup by dissolving 1 part of sugar in 1 part of water.

Option with centrifuge

Put all the ingredients, except the egg white, in a shaker. Add the ice, close and shake vigorously for a few seconds. Double strain and serve without ice in a bowl.

Pass the liquid in the centrifuge to obtain a clarified cocktail.

Put the clarified liquid in a cocktail shaker, add the egg white and shake without ice, vigorously for a few seconds. Double strain and serve without ice in a coupette glass.

Garnish with the pulp found in the centrifuge or with a sage leaf.

Option without the centrifuge

Put all the ingredients in a shaker. Close and shake vigorously without ice for a few seconds. Add the ice, then shake vigorously again. Double strain and serve without ice in a coupette glass. Garnish with a sage leaf.
