Make a simple syrup in a small saucepan: bring sugar and water to a boil; simmer until the sugar is dissolved, 3 minutes. Remove from the heat and let cool completely. Muddle the cucumber in a cocktail shaker. Add ice and the remaining ingredients and 30 ml of simple syrup and shake vigorously. Strain and serve in a hollowed-out cucumber.
Suggested garnishes: a scoop of lemon sorbet and a sprig of mint.
