Set aside some apple slices and mint for garnish. Crush together the remaining apple, mint, cucumber, Elderflower** syrup and lime. Add the Gin and Amaro, then pour the mixture into a cocktail shaker with ice. Shake, double strain the mixture, and then pour it into a pitcher with ice. Add Tonic to taste. Makes 4 100-ml servings. Garnish drinks with an apple slice and mint.
** If Elderflower Syrup can't be found, replace it with this recipe: To substitute the elderberry syrup, combine the elderberries, water, and cloves in a saucepan. Bring to a boil and then simmer for 30 minutes over low heat to reduce. Then, crush the berries in the mix until puréed. Strain through a sieve and discard the pulp. Add honey to the liquid mixture while still lukewarm; mix well. Use this mix in place of the elderberry syrup in the main recipe.
