5 leaves of Mint Juice of 1 Lime 1 Kiwi 1 oz Simple syrup 1 Egg white 3 bar spoons Homemade guacamole A slice of jalapeno a sprig of mint and a tartine of Guacamole

Homemade Guacamole:

In a bowl, muddle the flesh of a whole avocado, chop a few pieces of jalapeno and squeeze the juice of half a lime. Mix all ingredients.

In a saucepan over low heat, make a simple syrup by dissolving 1 part sugar in 1 part water.

In a cocktail shaker, muddle the kiwi flesh, then add all the other ingredients.

Close and shake vigorously for a few seconds without ice. Add ice, and shake vigorously once more. Double strain then serve on new ice in an Old Fashioned glass. Garnish with a slice of jalapeno, a sprig of mint and a tartine of Guacamole.
